Can grazing-land biodiversity add value to the production of meat and cheese and therefore benefit rural economies? Or are farming and the protection of natural habitats mutually exclusive? Explore the interview, taster panel, focus group, field survey and sample analyses data that underpin these questions.

Data created

Botanical survey on biodiverse pastures
Botanical field survey of sample grazing sites on study-area farms. To record data on the plant species present within a representative area of phytosociologically homogeneous vegetation, and record the percentage cover that each species vertically projects onto the ground surface.

Interviews with owners and managers of meat and cheese farms
In-depth interviews with owners / managers and farm visits on 42 selected farms, focusing on farm management, pasture use and management, farm business, husbandry practices, meat and cheese production, sale, marketing and retail and environmental management.

Meat product analyses
Material, sensory and chemical analysis of meat samples. To identify differences in characteristics between products in natural grassland and those derived from intensive production systems, and to explore the contribution of specific grassland characteristics to these differences and to determine whether those differences might be considered beneficial to human consumers and thereby a source of potential added value.
